Vegan Coconut Vanilla Bliss Balls

This week, I had a sudden craving for something coconutty, something vanilla, something tropical. These vegan coconut vanilla bliss balls are easy to make (they only take a few minutes!!) and really hit the spot. Bite-sized, filling, healthy, low calorie, high protein, and satisfying, these bliss balls are the perfect snack when you’re between meals and on the run!

 

I don’t know about you, but when I’m meal prepping, I hate recipes that call for a ton of ingredients and take ages to make. These bliss balls make a great snack if you’re doing a healthy meal prep. With only 6 ingredients and a total prep time of 10 minutes, they’re a cinch! You can make them while you’re prepping some tofu or grilling some vegetables. Too easy!

Bliss balls are a great introductory recipe if you’re new to eating vegan. They only take a few minutes to make, and don’t require any special, hard to find ingredients. The recipe doesn’t call for any cutting (except for the food processor), so it’s super kid friendly! Just ask your kids to help you roll and coat the bliss balls!

 

This recipe calls for coconut flour, but you can easily customize it to use whatever you happen to have at home. For example, roll them in cocoa powder for a chocolate version, or process some freeze-dried fruits into powder, and roll them in that! You can also forego rolling them in anything and eat them as-is, but they will be a bit sticky.

It may be hard to get the texture just right the first time. You want to process them until the mixture is sticky enough to stick together into balls. Go too long, though, and it’ll turn too soft, into a kind of paste. Check the process photos below if you’re confused!

 

They may be a bit soft just after preparing them. You can store them in the refrigerator, and they’ll firm right up! If you want to keep them for longer than a week, put them in a freezer-safe container, and store them in your freezer. Just pull them out a bit before you want to eat them, and let them thaw out to soften up!

Instructions
  1. If dates are hard and dry, soak for 5 mins in hot water. Add dates, salt, and vanilla extract to your food processor and pulse.
  2. Add cashews and almonds, and pulse for several minutes. Stop when nuts are finely chopped and the mixture is sticky, but not completely smooth. You may need to scrape the sides of your food processor several times.
  3. Spoon mixture into the palm of your hand, and roll into tablespoon-sized balls.
  4. Roll each ball in coconut flour.
  5. Store in refrigerator for up to one week, or freezer for even longer!
